Basically just a mini baklava, minus the pastry and butter and full of all things healthy! Enough said?
Baklava Bites
Ingredients
1/2 cup pistachios
3/4 cup walnuts
6 medjool dates
1 tbsp honey (for vegan use maple/agave syrup)
2 tbsp lemon juice
Method
1. Process all ingredients in a food processor until they come together in a ball.
2. Roll into mini balls. This should make roughly 15-20 bite sizes snacks!
3. Keep in the fridge or freezer for a few weeks or until they’re all gobbled up!
Best enjoyed alongside a big cup o’ tea.
